I encourage the use of food grade collection equipment, cleanliness, sterilizing all with 1/10 Chlorox solution, and filtering or sterilizing the end product before consumption. While the maple water in the tree is all but sterile, bacteria love sugar and water, and can grow overtime in the tab hole and on splines and more. Store maple water in the fridge and consume in 5 days.
